Agate Pass Oyster

The Agate Pass oyster is a tide tumbled oyster from Agate Passage in central Puget Sound. Agate Passage is a relatively protected body of water fed by swift currents from the main channel of Puget Sound. The proximity to the main channel creates an oyster that is higher in salinity than most of the oysters from nearby and further south. The tumbling process creates a deep cupped shell, with plump, full meats. The oysters tend to have a bright initial salt, that mellows slightly through the middle of the palette and finish with a hint of salted cucumber.
