Dennis Oyster

Crassostrea virginica

Dennis oysters are intertidally grown on the Quivet Shore of Cape Cod Bay. These oysters start their life in a hatchery and are transferred to a semi-tumbled bag system. Through the course of the grow-out, the oysters develop deep cups, hard shells and well-developed hinges. There is not much freshwater influence in the Cape, so the flavor tends to be quite salty, with a slight sweetness in the finish.
