Pleasant Bay oysters are grown on the outer Cape, near the town of Orleans. They are grown in the rack and bag method from hatchery produced seed. From seed to maturity takes about 3 years in this growing area. The proximity to the Atlantic Ocean along with the relatively low amount of fresh water in and around the Cape, creates an oyster with intense salinity. Salt will be the dominate flavor in these oysters, but a little sweetness will come through in the finish.
