Snow Creeks are grown utilizing the rack and bag method of oyster culture near the head of Discovery Bay, Washington. The bags themselves are located intertidally on racks off the bottom and the large mesh allows for excellent water circulation around the oyster and promotes rapid growth. The oysters mature in a year or so. The bay is fed by Snow Creek, which has its origin in the Olympic National Forest. These oysters enjoy extremely cold, clean, nutrient-rich water. They are salty, mildly sweet, with a melon-like finish.
